IT'S SUPERSTAR TIME!

This week starts the beginning of our three week "no sugar challenge."  Woo hoo!  As well as choosing daily desserts instead of treats, we're also going to cook new dinners.  Here are the dinner recipes used in this week's module... 

Dinner recipes


SUPERSTAR MISSION #1: invite friends or family over for a burrito bowl dinner.  take a photo of the different burrito bowls y'all made.  here's a list of different bowl ingredients that can be at your party.

Greens:

  • Romaine lettuce
  • Spinach
  • Spring mix
  • Sauteed kale

Sauces or dressings:

  • Cashew sour cream
  • Tofu sour cream
  • Salsa
  • Pineapple salsa
  • Salsa verde
  • Pico de gallo
  • Hot sauce
  • Mole sauce

Edible Garnish:

  • Cilantro
  • Scallion
  • Tortilla crumbles (toast or bake corn tortillas with spices on-top)
  • Lime wedges to squeeze fresh juice on-top
  • Fresh basil

Foundational Filling Foods:  

  • Baked sweet potato chunks
  • Black beans
  • Pinto beans
  • Corn
  • Lentil walnut taco meat
  • Brown rice
  • Wild rice
  • Plantains
  • Whole-gain grits

Veggies:

  • Sauteed onion, pepper and or mushrooms
  • Diced red onion
  • Raw bell peppers
  • Avocado (as a condiment)
  • Diced pineapple (not a veggie I know)
  • Hot peppers
  • Shishito peppers
  • Sauteed okra

 

     


    SUPERSTAR MISSION #2: cook 2 other dinners from this week's lesson (quick burgers, quick chili or cashew-alfredo pasta.  take photos of your mis en place for each dinner and post in the facebook group.  here are this week's recipes.
